The grapes are harvested exclusively by hand. Gentle destemming is followed by whole-cluster maceration for around 10 to 12 hours at a controlled temperature. Natural draining of the must gives the wine its double skin color. After fermentation, which lasts 14 to 18 days, the lees are removed to prevent malolactic fermentation from taking place.
