Here the vines sink their roots deep into soils of volcanic rock and black earth. After the harvest, the grapes are brought to the press house without delay. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. Once fermentation is complete, the wine is aged for several months on the fine lees before finally being bottled.
