This Cabernet Sauvignon Riserva was born in the splendid vineyards of Robert Mondavi Winery, with grapes from regions of California with a cool climate. It is produced with Cabernet Sauvignon grapes and a small quantity of Cabernet Franc grapes, harvested manually in the month of October following a very rigorous selection method. After destemming and a maceration of about a month, the wine is placed in oak barrels to start fermentation. In the same containers, the product carries out the evolutionary process which lasts more than 20 months, to further amplify its organoleptic characteristics. This is followed by bottling and a long aging in glass. This Cabernet Sauvignon has a very intense ruby red colour. The nose opens with aromas of ripe black cherries, blackberries and cassis, with notes of cigar box, black pepper, vanilla, toasted oak and coffee notes. In the mouth it is medium-bodied and soft and ripe tannins, with a persistent finish. Perfect to accompany grilled red meats, but also ideal in combination with first courses.
