When the glass is swirled, this white wine reveals a first-class balance, as it does not appear watery nor syrupy or liqueur-like on the sides of the glass. The first nose of the Aristargos offers nuances of peaches, oranges and brioche. The fruity components of the bouquet are joined by notes from barrel ageing, such as additional fruity-balsamic nuances. On the palate, the Aristargos from David & Nadia opens wonderfully dry, firm and aromatic. On the tongue, this well-balanced white wine is characterized by an extraordinarily light texture. The finish of this well ageable white wine from the Western Cape wine-growing region, more precisely from Swartland, ultimately delights with a remarkable length. Vinification of Aristargos by David & Nadia The basis for the first-class and wonderfully balanced Aristargos cuvée from David & Nadia is Chenin Blanc, Clairette, Roussanne and Semillon grapes. After being harvested by hand, the grapes are quickly brought to the winery. There they are selected and gently crushed. Fermentation then takes place in small wooden barrels at controlled temperatures. After the end of fermentation, the elegant Aristargos is matured for several more months in French oak barrels. Food recommendation for David & Nadia Aristargos This South African wine is best enjoyed moderately chilled at 11 - 13°C. It is perfectly suited as an accompaniment to vegetable salad with beetroot, omelette with salmon and fennel, or asparagus salad with quinoa.
