Martín Códax Organistrum Rías Baixas DO Albariño 0,75 ℓ

The Organistrum by Martín Códax is an Albariño from Rías Baixas, the result of a selection of low-vigor traditional plots with good sun exposure, capable of producing grapes with greater aromatic concentration and thicker skins. The name refers to a medieval string instrument, a cultural symbol of Galicia, revived and valued thanks to the winery's support.The harvest is manual, and the grapes are cooled before gentle whole-cluster pressing to preserve the aromas. Fermentation begins in stainless steel and is completed in French oak barrels, where malolactic fermentation also occurs with bi-weekly bâtonnage. Aging continues for 6 months in wood, followed by a further 12 months in steel to achieve the perfect balance between fruit and oak.On the sight, it appears straw yellow with greenish reflections. On the nose, it expresses great intensity with notes of fresh and fleshy fruit like loquat, combined with balsamic, creamy notes and well-integrated toasted oak. On the palate, it is structured and voluminous, with a slightly saline, dense, and flavorful character, and a long spicy finish.It pairs excellently with white meat, roasted poultry, rock fish, and rice-based dishes.
