Disobedience - Kaiken Wines

Chef's Table shows Francis Mallmann at the grill, quite idiosyncratic, like Kaiken. With Disobedience, they celebrate their collaboration, their friendship, and their freedom. The wine comes from two different terroirs. Alluvial soils in Vistalba, in the Malbec stronghold of Luján de Cuyo, produce complex, full-bodied wines. In Altamira, in the Valle de Uco, the limestone gives them a fresh, distinctive varietal character. Disobedience marries both with extensive manual labor, fermentation in concrete, and 21 months of aging: 15 months in barrels (30% new French oak, 70% used barrels), 6 months in the bottle. The recipe works! Fruity and spicy on the nose with hints of nuts and graphite, silky, fruity and long on the palate with sweet, mature tannins and a hint of dark chocolate.
