There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation, the wine matures for several months on the fine lees before it is finally bottled. After the wine is finished, the Sancerre AOC Le Tournebride is carefully harmonized.
