Danach werden die Trauben gekeltert und der geklärte Most rund drei Wochen bei kühler Temperatur im Stahltank vergoren. Diese kontrollierte Gärung bewahrt Frische und Aromatik. Anschließend reift der Jungwein für etwa sieben Monate im 30-hl-Holzfass auf der Feinhefe.
