Vinification of the Ortrugo Brut from Torre Fornello The basis for the balanced Ortrugo Brut from Emilia-Romagna is grapes of the Ortrugo variety. The grapes grow under optimal conditions in Emilia-Romagna. Here, the vines sink their roots deep into clay and limestone soils. After hand-picking, the grapes are quickly brought to the press house. There they are sorted and gently crushed. This is followed by the fermentation of the base wines. After the cuvée has been assembled, further maturation follows using the Charmat method. The Torre Fornello Ortrugo Brut then matures on the full lees for 3 months.
