Vinification of the Lagrein Rosso from Cantina Tramin The grapes for this classic red wine from South Tyrol grow on deep, sandy soils, some of which contain limestone and porphyry. The grapes are destemmed after manual harvesting and fermented at 28°-30°C in small stainless steel tanks and concrete barrels. The subsequent malolactic fermentation takes place in wooden barrels and partly in concrete tanks.
