Vinification of the Domaine Lafage Centenaire The grapes for this French white wine come from vines over 90 years old. The cuvée is composed of Grenache blanc, Grenache Gris and Roussanne. After harvesting by hand, the grapes are cold macerated for 20 hours and the must is then fermented at 16°C. Subsequently, 5% of this cuvée undergoes malolactic acid transformation.
