Vinification of the Nero d'Avola Sicilia DOC from Sallier de la Tour The estate of the Sallier de la Tour family in Monreale near Palermo is still family-owned, but the vineyards and winery are managed by the Tasca family, who are experienced in viticulture. This has led to a rise in international recognition of the estate and its elegant wines. For this Nero d'Avola, the grapes are grown in the vineyards of Monreale; yields are low, which gives the wine high quality and concentration. The grapes are traditionally vinified as a red wine, at controlled temperature and on the skins, and malolactic fermentation is carried out completely. Afterwards, 30% of the wine is matured for 12 months in small French oak barrels from Allier and Tronçais in their second and third use, while the remaining 70% ages in stainless steel tanks. After bottling, the wine rests in the bottle for a few weeks to harmonize.
