Vinification of the Wotanfels Riesling Erste Lage by Weingut Schwedhelm The grapes for this wine are hand-selected and harvested only when fully ripe. After 8 hours of maceration, the must is transferred to the stainless steel tank where spontaneous fermentation takes place. The Riesling is allowed to harmonize further on the lees until May, when it is drawn into the bottle at the beginning of June.
