This old, indigenous grape originates from Kakheti, more precisely from the historic subregion of Tsinandali. Here, Kisi develops remarkably complex aromatics and is ideally suited for vinification as an orange wine in traditional qvevri amphorae. Production of Orgo Kisi Qvevri - Teleda Winery The grapes come from carefully selected sites around the village of Kisiskhevi in the Telavi region. The interplay of clay and marl soils and the moderate temperature differences between day and night intensely shape the aromatics. Kisi here shows high ripening potential and a pronounced, independent structure. Harvesting is done selectively by hand, grape by grape. Only fully ripe fruit makes it into the cellar. Strict selection already takes place in the vineyard to use only the most aromatically concentrated berries. Hand harvesting protects the grape skins and prevents unwanted oxidation before fermentation. In the cellar, traditional Georgian maturation in qvevri follows. These large clay amphorae are buried in the ground and allow a very gentle fermentation on the skins. Skins, pulp and often stems remain in contact with the must for an extended period, giving the wine its intense color, pronounced structure and distinctive tannin profile. During fermentation, the winemaker regularly keeps the must in motion to extract aromas, color and structure evenly. Thanks to the buried qvevri, the temperature remains naturally stable. This traditional approach takes center stage and lends the wine a unique character that is deeply rooted in Georgian wine culture. After fermentation, the wine continues to rest on the fine lees in the qvevri. This contact imparts additional creaminess, subtle spice and complexity. Maturation takes place with minimal intervention, reflecting the character of the Kisi grape variety without distortion. The winemaker at Teleda Winery pursues a reduced, clear style that places authenticity and origin at the forefront.
