Vinification of Guado al Tasso Bolgheri Superiore from Guado al Tasso The basis for the balanced Guado al Tasso Bolgheri Superiore from Tuscany consists of grapes from the Cabernet Franc, Cabernet Sauvignon and Merlot varieties. The grapes grow close to the sea in Tuscany. Here, the vines drive their roots deep into soils of sand and loess. Due to the moderating influence of the nearby sea, the grapes ripen more slowly and develop greater aromatic complexity. Guado al Tasso Bolgheri Superiore is an Old World wine through and through, as this Italian exudes an exceptional European charm that clearly underlines the success of wines from the Old World. A very strong influence on the ripening of the grapes is also exerted by the fact that the Cabernet Franc, Cabernet Sauvignon and Merlot grapes thrive under the influence of a warm climate. This results, among other things, in particularly well-ripened grapes and a rather high alcohol content in the wine. At the point of optimal ripeness, the grapes for Guado al Tasso Bolgheri Superiore are harvested exclusively by hand, without the use of rough, less selective mechanical harvesters. After the harvest, the grapes are brought to the winery as quickly as possible. There they are selected and gently crushed. Fermentation then takes place in small wooden barrels at controlled temperatures. After fermentation is complete, Guado al Tasso Bolgheri Superiore is aged for another 28 months in barriques and new French oak. This barrel aging is followed by a long period of bottle maturation, which makes this red wine even more complex.
