The region lies on a high plateau with in some places very barren, stony soils of limestone, clay and gravel. The altitude brings large temperature differences between day and night. This allows the berries to ripen slowly, develop dense aromas and retain their inner freshness. The focus is on Tempranillo as the single-varietal basis of this wine. Old vines with low yields provide small, aromatic grapes with thick skins. These bring intense color, finely structured tannins and pronounced dark fruit. Tempranillo gives the wine its core identity: juicy blackberry, plum, spice and ageing potential. Harvesting is selective, depending on the plot and degree of ripeness, often in the early morning hours. This way the grapes arrive cool at the winery, which preserves the aromatics. Strict selection removes overripe or damaged berries. Only ripe fruit is used for vinification. In the cellar, the grapes are gently crushed and undergo controlled fermentation on the skins.
