Perlhofer Crescendo IGT - Weingut RitterhofThe Perlhofer Crescendo IGT from the Ritterhof winery has a dark ruby red color in the glass and fruity aromas of dark berries. The bouquet is accompanied by spicy notes, which this cuvée owes to its ageing in wood. This South Tyrolean red wine is velvety and full on the palate. Vinification for the Perlhofer Crescendo This cuvée is made from the Lagrein, Vernatsch and Merlot grape varieties. These grape varieties prefer different soil conditions in the St. Magdalena, Überetsch and Unterland regions. While Merlot requires porphyry soil, Lagrein grows on sandy gravel soils and Vernatsch on clay soils. After the grapes are selectively harvested by hand, they are fermented separately from each other in a traditional, temperature-controlled process for 10 days at 28° Celsius. After asamblage, the wine matures for 6 months in large wooden barrels. Dining recommendations for the Perlhofer Crescendo Enjoy this dry red wine cuvée with fried fish, light meat dishes or with cheese.
