The grapes are harvested mechanically, cold maceration takes place in horizontal presses for eight hours, after which the must is clarified by natural decantation. Fermentation in stainless steel tanks at a controlled temperature of 15°C is followed by transfer to further stainless steel tanks, where the wine is aged for a period of four months at a constant temperature. After bottling, the wine is stored in the bottles for some time before it is released for sale.
