After manual harvesting and a short period of cold maceration, the must is fermented in old Allier barriques and also matured in these barrels for eight months. It then matures in the bottle for a few months before being released for sale. Anselmi masterfully demonstrates the potential of the Garganega grape with this wine. It is not produced every year, but regularly wins the highest awards in the years of its release.
