Vinification of the Rute Bolgheri Rosso DOC by Guado al Melo The name of this much-loved Tuscan terroir wine comes from the Etruscan word for red, which is found in many European languages: Rute . It is made primarily from Cabernet Sauvignon and a small proportion of Merlot. The wine is vinified without any additives or corrections that could alter the original character of the grapes in any way. After the harvest, the grapes are very gently destemmed and pressed. Fermentation and maceration are followed by ageing for around 12 months in used barrels and a further 6 months in the bottle. The wine is not filtered, but is lightened by decanting. The vineyard is located on a hillside, on loose, deep and structurally rich alluvial soils. The Mediterranean climate is influenced by the thermal winds from the nearby Thyrrenian coast, with considerable temperature differences between day and night in summer. Cultivation and winemaking are sustainable and use the methods of integrated organic farming.
