Vinification of the Rossole Toscana IGT from Borgo Salcetino This tasty red wine is made from 70% Sangiovese and 30% Merlot. The grapes grow in vineyards in the village of Lucarelli in the municipality of Radda in Chianti, on soils characterized by sand, loam and clay. The completely manual harvest is followed by gentle destemming of the grapes and then alcoholic fermentation over a period of 21 days at a controlled temperature of 23°C. Malolactic fermentation takes place 100% in barriques, followed by ageing for 12 months at a constant temperature of 16°C. The bottled wine is then left to refine for a long time in the bottle.
