The finish is also accompanied by mineral facets of the soils dominated by gravel. Vinification of the Beronia Verdejo Rueda This wine clearly focuses on one grape variety, and that is Verdejo. Only the best grape material was brought in for this exceptionally balanced single-varietal wine from Beronia. The grapes grow under optimal conditions in Castile - León. The vines here dig their roots deep into soils of gravel. After the grape harvest, the grapes are immediately taken to the winery. Here they are selected and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. Fermentation is followed by aging for several months on the fine lees before the wine is finally drawn off. Once the wine is finished, the Verdejo Rueda is carefully harmonized.
