In Sud Ouest, the vines that produce the grapes for this wine grow on soils made up of clay and limestone. After the harvest, the grapes are quickly taken to the press house. Here they are selected and gently crushed. Fermentation follows in a stainless steel tank at controlled temperatures. This is followed by aging for several months on the fine lees before the wine is finally bottled.
