The Tenuta Ulisse Montepulciano is full-bodied but not too heavy and impresses with its well-balanced acidity and great structure. Vinification of the Tenuta Ulisse Montepulciano d'Abruzzo DOC The grape variety wines from Ulisse impressively demonstrate the fantastic aromas and flavors that are created when indigenous grape varieties grow on the ideal soils for them. This red wine is made from 100% Montepulciano d'Abruzzo grapes. The origin of this grape variety has not yet been fully clarified, but it has always been cultivated in Abruzzo and in central and southern Italy. Thanks to the passion of some winegrowers, Montepulciano d'Abruzzo grapes are now one of the best bases for excellent red wines. The selective hand-picking takes place in 10 kg containers. Cooled by dry ice, the grapes reach the winery undamaged. There they are selected again to ensure an absolutely healthy harvest. The grapes are cooled down to -5°C within 3 minutes using nitrogen. This breaks down the cell structure and promotes extraction, which explains the intense, fascinating fresh and fruity aroma of this wine. Fermentation takes place at a controlled temperature in stainless steel tanks, followed by ageing in the same tanks for a period of 4 months.
