Vinification of the Weissburgunder by Stefan Müller This white wine clearly focuses on a single grape variety, namely Weissburgunder. For this extraordinarily elegant single-varietal wine by Stefan Müller, only first-class grapes were used. In the Saar, the vines that produce the grapes for this wine grow on slate soils. At the time of optimal ripeness, the grapes for the Weissburgunder are picked by hand only, without the use of coarse and less selective machinery. After harvesting, the grapes are promptly taken to the winery. Here, they are sorted and gently crushed. Fermentation follows in stainless steel tanks at controlled temperatures. After the fermentation is complete, the Weissburgunder can harmonize further on the fine lees for a few months.
