
Sauvignon Blanc - CederbergCederberg's Sauvignon Blanc from South Africa's Western Cape wine region in Cape South Coast is a varietally pure, aromatic and balanced white wine. In the glass, this wine shimmers a sparkling lemon yellow with light golden highlights. The nose delights in a fruity-vegetable combination of aromas. Ripe gooseberry, meets juicy guava and fresh lemon zest with hints of asparagus as well as green fig. On the palate, this South African white wine is delightfully refreshing with crisp acidity and round body. Thanks to the sur lie ageing, a creamy touch is added. Vinification of the Cederberg Sauvignon Blanc The Sauvignon Blanc vines grow in the Cederberg vineyard in south and east facing vineyards on slate as well as sandstone soils. The grapes are harvested exclusively by hand. The grapes are immediately taken to the Cederberg winery, where they are brought to a temperature of 8 degrees Celsius and gently pressed. The berries are then left on the skins for 8 hours. Only the free-run juice is used in this white wine. The fermentation process is carried out with selected yeast strains for 22 to 30 days at 11 degrees Celsius. Then this wine is aged sur lie for 4 months - during which the bâttonage takes place once a month.
