Vinification of the Care Family Vineyards Garnacha Nativa The powerful Garnacha Nativa from Spain is a single-varietal wine, pressed from the Garnacha grape variety. The grapes grow in optimal conditions in Aragon. The vines here dig their roots deep into soils of limestone, shale and gravel. When perfectly ripe, the grapes for Garnacha Nativa are harvested exclusively by hand, without the help of coarse and less selective grape harvesters. After the hand harvest, the grapes are taken to the press house in the fastest way possible. Here they are selected and carefully crushed. Then fermentation takes place in small wood at controlled temperatures. The fermentation is followed by a maturation of 8 months in oak barriques. It is perfect as an accompanying wine to cod with cucumber-mustard vegetables, spaghetti with caper-tomato sauce or veal boiled beef with beans and tomatoes.
