Vinification of the Pinot Grigio Friuli Grave DOC from Villa Chiopris The grapes for this Pinot Grigio grow in the Friuli Grave wine-growing region in the municipalities of Chiopris-Viscone and San Giovanni al Natisone, on dolomitic, stony loamy soils at the foothills of the Collio region. The special composition of the soil favors the temperature differences between day and night and thus the cultivation of aromatic grape varieties. The grapes are harvested mechanically, cold macerated in horizontal presses for 8 hours and the must is then decanted. Fermentation takes place at a controlled temperature of 15°C in stainless steel tanks, the wine remains in the same containers and matures for 4 months. After bottling, the Pinot Grigio is aged in the bottle for a certain period of time before being released for sale.
