Beautifully balanced on the palate and pleasantly nervy progression. 3 glasses, Gambero Rosso 2017 Vinification of the Borgo Salcetino Chianti Classico DOCG The Sangiovese (95%) and Canaiolo (5%) grape varieties are grown in the vineyards of the municipality of Radda in Chianti on clayey and sandy soil. The grapes are harvested by hand. Maceration on the skins takes place for 18 days at a controlled temperature of 23° degrees. This is followed by malolactic fermentation, 70% of which takes place in wooden barrels and 30% in steel tanks. The Borgo Salcetino Chianti Classico then remains in wooden barrels for a further 12 months. Only then is it bottled and left in the bottle for a further period before this wonderful Chianti wine from Tuscany goes on sale.
