The grapes for the Spätlese Traminer are harvested exclusively by hand at optimum ripeness, without the help of coarse and barely selective harvesters. After the harvest, the grapes are quickly taken to the press house. Here they are sorted and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. At the end of fermentation, the Spätlese Traminer can continue to harmonize on the fine lees for a few months.
