Vinification of the Franz Haas Manna Vigneti delle Dolomiti The balanced Manna Vigneti delle Dolomiti from Italy is a cuvée made from the Chardonnay, Gewürztraminer, Riesling and Sauvignon Blanc grape varieties. The grapes grow under optimal conditions in Trentino-Alto Adige. Here, the vines dig their roots deep into soils of sand, limestone, silicate rock and marl. Obviously, the Manna Vigneti delle Dolomiti is also determined by more than just the Alto Adige / South Tyrol DOC soil. This Italian wine can be described as an Old World wine in the best sense of the word, presenting itself in an exceptionally impressive way. After being harvested by hand, the grapes are transported to the press house as quickly as possible. Here they are sorted and carefully crushed. This is followed by fermentation in stainless steel tanks and small wooden barrels at controlled temperatures. Fermentation is followed by maturation for 10 months in barriques and 500-liter oak barrels. Ageing in wooden barrels is followed by considerable bottle ageing, which makes this white wine even more complex. Recommendation for Franz Haas Manna Vigneti delle Dolomiti This Italian white wine is best enjoyed moderately chilled at 11 - 13°C. It goes perfectly with baked sheep's cheese parcels, coconut and lime fish curry or lemon-chilli chicken with bulgur. <p
