Vinification for the ULISSE Cerasuolo d'Abruzzo DOC from Tenuta Ulisse The ULISSE line consists of single-varietal wines, which impressively demonstrate the fantastic aromas and flavors that are created when indigenous grape varieties grow on the ideal soils for them. This rosé wine is made from 100% Montepulciano d'Abruzzo grapes. The origin of this grape variety has not yet been fully clarified, but it has always been cultivated in Abruzzo and in central and southern Italy. Thanks to the passion of some winegrowers, Montepulciano d'Abruzzo grapes are now among the best red grapes. The selective hand-picking takes place in 10 kilogram containers and the grapes are cooled with dry ice before being transported undamaged to the winery. There they are selected again to ensure an absolutely healthy harvest. The grapes are cooled down to -5°C within 3 minutes using nitrogen. This breaks up the cell structure and promotes extraction, which explains the intense, fascinating fresh and fruity aroma of this wine. Fermentation takes place at a controlled temperature in stainless steel tanks, followed by ageing in the same tanks for a period of 3 months.
