The region is among Germany's warmest growing areas and offers ideal conditions for Burgunder varieties. The winery’s vineyards are characterized by limestone weathering soils, imparting a distinctive mineral character to the grapes. The vines are cultivated organically – with consistent canopy management, yield reduction, and hand-harvesting. Only fully ripened and healthy grapes make their way into the cellar. After a brief maceration period, the gentle pressing of the berries takes place. Fermentation occurs in temperature-controlled stainless steel tanks and used barriques to clearly express the terroir and grape varieties. Part of the wine aging takes place on fine lees with regular bâtonnage (stirring), which gives the wine depth, structure, and a fine creaminess.
