When they are perfectly ripe, the grapes for Ciro' Rosato Bio are harvested exclusively by hand, without the use of coarse and hardly selective full harvesters. After the harvest, the grapes reach the press house by the fastest route. Here they are selected and carefully crushed. Then fermentation takes place in stainless steel tanks at controlled temperatures. After the completion of fermentation, the Ciro' Rosato Bio can harmonize further for 3 months on the fine lees.
