In Sud Ouest, the vines that produce the grapes for this wine grow on limestone and gravel soils. Due to the moderating influence of the nearby sea, the grapes ripen more slowly and develop more aromatic complexity. After being harvested by hand, the grapes are immediately taken to the winery. Here they are selected and carefully crushed. This is followed by fermentation in stainless steel tanks and small wooden barrels at controlled temperatures. Fermentation is followed by maturation on the fine lees for several months before the wine is finally bottled.
