Here, the vines dig their roots deep into loam and loess soils. When perfect physiological ripeness is ensured, the grapes for the Widder Chardonnay are harvested exclusively by hand without the use of stressful and less selective machines. After the grape harvest, the grapes are quickly taken to the winery. Here they are selected and carefully broken up. This is followed by fermentation in small wooden vats at controlled temperatures. Fermentation is followed by ageing for several months in French oak barrels.
