The Satèn Franciacorta presents itself in the glass with a fine and long-lasting perlage in light straw yellow. The nose reveals refreshing aromas of hawthorn, bread crust, with balsamic nuances and hints of apple Renette, dried figs and peanuts. On the palate, this elegant sparkling wine is soft, silky, melting but not sweet, fresh and appealing on the palate, with a long, extraordinarily tasty and persistent finish. Vinification of Satèn Franciacorta DOCG by Contadi Castaldi For this sparkling wine, only Chardonnay is vinified from selected grapes from the vineyards in Franciacorta. The grapes are harvested at the end of August, beginning of September. After simple pressing and cold static decantation, alcoholic fermentation takes place in stainless steel tanks with selected yeasts for a period of 20 days, followed by partial malolactic fermentation. The first ageing of the wine takes place over 7 months partly in stainless steel and partly in barriques, after which the wine is transferred to the bottle for bottle fermentation on the fine lees, which lasts between 30 and 36 months. After dégorgement, the sparkling wine is stored in the bottle for a further 3 to 4 months before being released for sale.
