Vinification of Draga Sauvignon Collio This balanced white wine from Italy is vinified from the grape variety Sauvignon Blanc. The grapes grow in optimal conditions in Friuli Venezia Giulia. The vines here dig their roots deep into soils of clay and sandstone. After harvesting, the grapes are quickly taken to the press house. Here they are selected and carefully crushed. Fermentation follows in stainless steel tanks at controlled temperatures. The fermentation is followed by aging for several months on the fine lees before the wine is finally drawn into bottles. It is perfect as an accompaniment to spinach gratin with almonds, cod with cucumber-mustard vegetables, or roasted trout with ginger pear.
