Vinification of Lefkos of Cenatiempo This balanced white wine from Italy is vinified from the grape varieties Forastera and Biancolella. After the hand harvest, the grapes arrive swiftly at the winery. Here they are sorted and carefully crushed. Fermentation follows in stainless steel tanks at controlled temperatures. Vinification is followed by aging for several months on the fine lees before the wine is finally drawn into bottles. Recommendation for Lefkos of Cenatiempo This Italian is best enjoyed well chilled at 8 - 10°C. It is perfect as an accompaniment to roasted trout with ginger pear, cod with cucumber-mustard vegetables or leek tortilla.
