Vinification of Simoncelli's Merlot Balanced Merlot from Italy is a single-varietal wine, made from the Merlot grape variety. In Trentino-Alto Adige, the vines that produce the grapes for this wine grow on soils of sand. After the harvest, the grapes arrive quickly at the winery. Here they are sorted and carefully crushed. Then fermentation takes place in stainless steel tanks at controlled temperatures. After the end of fermentation, the Merlot can harmonize further for 6 months on the fine lees. It is perfect as an accompanying wine to vegetable couscous with beef meatballs, stuffed peppers, or lamb stew with chickpeas and dried figs.
