Vinification of Mercuria by Castel Noarna This balanced red wine from Italy is organically vinified from the Cabernet Sauvignon and Merlot grape varieties. In Trentino-Alto Adige, the vines that produce the grapes for this wine grow on soils of limestone. After the grape harvest, the grapes arrive quickly at the winery. Here they are selected and carefully broken up. Fermentation follows in stainless steel tanks and large wood at controlled temperatures. At its end, the organically produced Mercuria is aged for another 24 months in oak barrels. Serving Suggestion for Castel Noarna Mercuria This Italian red wine is best enjoyed tempered at 15 - 18°C.
