Only premium grape material was harvested for this exceptionally balanced single-vineyard wine from Brocard. After the hand harvest, the grapes reach the press house by the fastest route. Here they are sorted and carefully crushed. Then fermentation takes place in stainless steel tanks at controlled temperatures. After the end of fermentation, the Chablis Vieilles Vignes can continue to harmonize on the fine lees for a few months. It is perfect as an accompanying wine to leek tortilla, spinach gratin with almonds or spaghetti with caper and tomato sauce.
