In the aftertaste, mineral notes from the soils dominated by black earth and volcanic rock add to the complexity. Vinification of Saperavi from Winery Bediani This red wine clearly focuses on a single grape variety, namely Saperavi. For this wonderfully balanced varietal wine from Winery Bediani, only top-quality harvested grapes were used. The grapes grow under optimal conditions in Kakheti. The vines dig their roots deeply into soils of volcanic rock and black earth. After handpicking, the grapes are quickly transported to the pressing house. Here, they are selected and gently broken. This is followed by fermentation in stainless steel tanks at controlled temperatures. After the fermentation is complete, the Saperavi is allowed to harmonize on the fine lees for several months. It pairs perfectly with braised chicken in red wine, vegetable couscous with beef meatballs, or ossobuco.
