Vinification of the Millesimato Brut Franciacorta from Monzio Compagnoni The basis for the first-class and wonderfully elegant Millesimato Brut Franciacorta cuvée from Monzio Compagnoni are Chardonnay and Pinot Noir grapes. This Italian wine can be described as an Old World wine in the best sense of the word and is exceptionally impressive. The ripening of the grapes for this wine made from Chardonnay and Pinot Noir is influenced to a very large extent by the climate of the growing region. In Lombardy, the grapes thrive in a rather cool climate, which is reflected in particularly long and even grapes and a rather moderate must weight. After being harvested by hand, the grapes are transported to the press house as quickly as possible. Here they are sorted and carefully crushed. This is followed by fermentation in small wooden vats at controlled temperatures. The fermentation is followed by 60 months of ageing in oak barriques. Recommended pairing for Monzio Compagnoni Millesimato Brut Franciacorta This Italian sparkling wine is best enjoyed chilled at 8 - 10°C.
