Vinification of the Stemmari Pinot Noir In Sambuca, in the province of Agrigento, the Pinot Noir vines grow on clayey soils. The harvest begins in late August - early September, when the berries are fully ripe. The grapes are brought to the Stemmari wine cellar, where they are first destemmed, briefly pressed and then macerated for 2 days at 10 to 12 degrees Celsius. The fermentation process takes place in stainless steel tanks for 7 days at a controlled temperature of 24 degrees Celsius. Finally, a large part of this red wine is matured in stainless steel tanks - the smaller part rounds off harmoniously in oak barrels for 6 to 7 months.
