Vinification of the Alamos Torrontes The Torrontes grapes for this wine are harvested by hand. The grapes are immediately taken to the Alamos winery where they are gently pressed. After pressing, the must is cold settled and bottled fresh from the press. The fermentation process then begins at a controlled temperature in stainless steel tanks. Aging also takes place in stainless steel tanks.
