Vinification of Pecorino Terre di Chieti by Ulisse The ULISSE line consists of single-varietal wines that impressively demonstrate the fantastic aromas and flavors that emerge when indigenous grape varieties grow in their ideal soils. The origin of the Pecorino grapes is uncertain, but they have been cultivated for centuries in the central regions of Italy, such as Abruzzo. The selective hand harvest is done in 10-kilogram containers, and the grapes reach the winery undamaged, cooled by dry ice. There, they are again selected to ensure absolutely healthy grapes. The grapes are cooled to -5°C using nitrogen within 3 minutes. This breaks down the cell structure and promotes extraction, which explains the intense, fascinating fresh-fruity aroma of this wine. Fermentation takes place under temperature control in stainless steel tanks with subsequent aging in the same for a period of 3 months.
