The grapes macerate for between 48 and 72 days on the skins to achieve better tannin content, followed by fermentation, the second malolactic fermentation, and aging in stainless steel tanks. When vinified as sparkling wine, the second fermentation occurs using the Charmat method. The Lambrusco Grasparossa is made dry.
