Vinification of the Ca' Nova from Azienda Agricola Gorgo This balanced red wine from Italy is made from the Corvina and Merlot grape varieties. When they are perfectly ripe, the grapes for Ca' Nova are harvested exclusively by hand without the help of coarse and less selective grape harvesters. After the harvest, the grapes are quickly taken to the press house. Here they are sorted and carefully crushed. Fermentation then takes place in small oak barrels at controlled temperatures. Vinification is followed by ageing for several months in oak barriques.
