Vinification of the Stefano Accordini Tempus The balanced Tempus from Italy is a cuvée made from the Corvina and Merlot grape varieties. The grapes for this red wine from Italy are harvested exclusively by hand after optimal ripeness has been ensured. After harvesting, the grapes are immediately taken to the press house. Here they are sorted and carefully crushed. This is followed by fermentation in large oak barrels at controlled temperatures. At the end of this process, the Tempus is aged for a further 6 months in French oak barrels.
